Details
The low yielding gewürztraminer was handpicked at optimum ripeness. The fruit was chilled and macerated for 16 hours before being pressed off gently. The juice had a light settling prior to ferment in stainless steel tanks with selected yeast to enhance the aromatic character for 20 days. The fermentation was stopped when all elements of residual sugar, alcohol and phenolic structure were in balance. The wine then was lightly fined and filtered prior to bottling.
